No added water or yeast (solely fermented from the yeast and bacteria naturally present on the cherries).
Due to both the nature of spontaneous fermentations and the use of a variety of vinification methods going into the final blend, this release will show a bigger range of differences between the vintages than many of our other releases. Definitely a product made for verticals!

Local cherries with 11 days of skin contact in the must together with local wildflower honey as the only ingredients. The product was made in many small batches, produced with different techniques, and later blended together:
For this vintage, one thread was cold soaked, one was carbonic macerated, while the rest went through a normal spontaneous maceration and conditioning phase. We also let one smaller part of it rest on french oak spirals. They were all blended together in well-thought-out ratios based on taste, getting the best out of all the "band players".
This vintage is more fresh and fruit-forward and with less oxidative elements than the 2020 release. On top of a really bright and concentrated expression of the Stevnsbær cherries you'll get some crazy deep caramel and chocolate notes throughout.

Bottle sample at a Yana's tasting at Sahar's pet shop. Deep red. Lots of cherries, honey, sweet and sourish, a bit of pomegranate, thick, rounded. Great stuff.

Pours intensely dark purple, scent is full, herbaceous, blueberry, intense, mildly acidic. Full on blueberry. Honey very hidden, perhaps a bit simple- yet lovely intensity. Weird how this tastes more like blueberry to me, if it's a cherry mead ...

Thick, sweet, fruity, tart. Strong ripe red cherries, some maraschino, honey, marzipan. Rich and full, smooth, delicious. That's what I'm talking about.

Very dark red, smells insanely cherry, some little bit of oak / pits? Soft, surprisingly dry, almost feels a bit dusty. Interesting. Flavourwise cherry first, with lots of cinnamon that you get, decently sweet. Real complex, real delicious. Slow sipper.
