Saison brewed with May Provisions, Unity Brewery’s farmhouse arm. The beer was brewed in June 2021 with fresh elderflower being added directly to the boil along with UK Cascade hops. It was then barrel aged in an ex white wine barrel that previously contained Organic Harvest Saison. Floral nose gives way to a bitter and zesty burst and complex yeast character.

Bottle from Saltpeter Wines, Woodbridge. Aroma combines a vinous streak with sherbert snd floral elements. Cloudy honey gold. Foamy translucent white head. Medium-heavy sour. Sweet streak. Hints of caramel. Big sherbert dose. Light. Thin. Fizzy carbonation. Long dry astringent finish. Punchy.

A light haze on this gold beer, small pale cream colour head. Palate is light and smooth but develops good fine crispy carbonation on the back end. Fairly dry to boot. Elderflower is well presented, floral and a little sweet. Mild citrus from the UK Cascade. Good floral funk adds to the mix but there is also something quite sharp on the back end which reduces drinkability. Well it does unless you are one of these antacid swallowing sour heads. A little lemon acid then. Light dry finish. Very nearly a very good beer, they just let it run to too sharp.

Couleur dorée, col blanc.
Arôme donne au premier abord un bouquet fort marqué de fleur de sureau - apparement ajoutées en dernière addition. A l'opposé de ce que je venais de sentir avec la version sureau de Nectar Bohème.
Après qcq minutes le tout devient quasi surfait en café avec cette impression de feuilles surfementées.
Palais est marqué par un départ plaisant de sureau mais de suite repris par une note aigre-sourish de café et un fini se terminantn sur une acidité élevée.
L'apport du houblon Cascade en demeure, de fait, très faible. Pas mauvaise, mais trop aigre pour moi, et ce caractère de café nuit complètement à la base. Cet aspect, je le pense n'est certainement pas ce qui est voulu dans le produit final.
