We produce only as much Sylter Hopfen in one year, as our harvest on Sylt permits in one year. Thus our gourmet beer is a specialty and not a mass-produced beverage.
It is for this reason that each bottle is unique!
“Manufaktur” means “handmade” - this is a claim that we take literally at Sylter Hopfen. In our factory our gourmet beer is fermented for a second time and this fermentation takes place inside our “Imperial" bottle with specially bred champagne yeast.
After a maturation period that takes several weeks, the bottles are shaken down by hand, so that the yeast can settle in the bottle neck after the completion of the fermentation. Here it remains for several more weeks to give the Sylter Hopfen its special taste. The subsequent disgorging process (expelling the yeast) improves the Sylter Hopfen and after the cork has been put into the bottle a real “Imperial beer” is born.
Diplom Master Brewer Thomas W. Kipka, learned this very high standards in beer making when he was brewing for the Royal Houses of Denmark and Norway. From this arose the opinion that beer can be made more naturally without preservatives or other chemicals as it is practiced in today’s large brewing companies.
Thus, the idea to create a gourmet beer matured - using a process that is no longer possible to be used in today’s mass production. Sylter Hopfen is produced with our own special and natural ingredients, at a slow pace and with special care that is only possible in a small “Manufaktur” brewery. Thus arose Sylter Hopfen in its own bottle, with its noble character, individually numbered label and the real gold embossing on the label.

Corked bottle from kappldav123. Amber color, hazy. The aroma is that of a light champagne. Grapy and somewhat vinous. Vinous flavor with muscat grapes and a late grassy hop flash. Absolutely not hoppy, but quite champagne-like. Demi-sec, that is. Interesting and pleasant.

Many thanks for this champagne beer to kevnic2008. My bottle was 7,1% and Vintage 2009. Flaschen Nr. 1568. Wyglad swietny w klasycznym kieliszku szampanowym prezentowalo sie lepiej niz w Teku, bylo sporo pienistosci i rosnacej w mgnieniu pianki, barwa miedziana, metnawe, blizej temu piwu do szampanskiego piwa Malheur niz do Deusa, a wiec lepszy kierunek smakowy jak dla mnie. Pachnie figami, lekko octem winnym, w smaku stary przyrumieniony karmel z dominujaca kwaskowoscia i wytrawnoscia, nieco mokrego drewna i klimatow gueuze, a przy tym wszem obecne figi, mnostwo fig. Alkohol perfekcyjnie ukryty. Niemal 8 letnie piwo, sadze ze uplywajacy czas tylko mu sluzy. Doskonala alternatywa na przywitanie nowego roku, zaden drogi szampan z szampanii nie podskoczy temu piwu. Mistrzostwo. DANKE MARIUSZ. Happy New Year.

Bottle shared with Kristall-König at home. Thanks a lot! Murky orange or copper in the glass, one finger head. Straw and hop on the nose. Taste smooth malty, honey, almonds. High carbonation. Encreasing malty to the end. Some sweetness. Champagnelike for the Sylt holiday house wives. Nice but shurely overprized.

From a bottle at the RB DC tasting September 6. Pours a hazy gold with an off white head. Fruity nose. Flavors of peach and some tart notes.

Fra elegant flaske på RBHD-samling på Fridtjofen april-15: flasken har nummer 4000 og er merket best før 031113. Spiller ingen rolle, vi går på med stor iver og blir belønnet for vår nysgjerrighet, dette er gode saker som jeg vender tilbake til flere ganger i løpet av kvelden. Lett uklar oransjegylden med fint, tett skum. Nydelig aroma og smak av bringebær, honning, krydder og marmelade. Flott kropp både på flaske og fluidum. Lett syrlig. 7,1% (ikke 6,2 som rb sier). Vi er klare til å fortsette den kollektive selvpleie!

Shared bottle at RB/HD on board Fridtjofen 14.04.15. Dark golden. Foamy, dense and persistent off-white head and lacing. Fine aroma of marmelade and fermented berries. Similar, and slightly sour taste.

Shared 750 ml corked & caged bottle, as Sylter Hopfen Ernte 2012. ABV is 7.1%. From CITTI-Markt Flensburg. Orange colour, large white head. Pleasant aroma of herbal hops, some spicy and fruity notes too. Herbal hops in the flavour, also notes of raspberries.

Big slightly fizzy-creamy longlasting head. Aroma is slightly floral, weeds, flowers, yeast, grain, wet grass, cellar, hay, sugar, alcohol. Taste is sweet, sugar, grain, hay, paper, weeds, flowers, grass. Medium bitterness, slightly harsh mouthfeel. Fair enough, kind of disappointing.

Aroma has grassy hops and some malty tones. Flavour has quite aggressive grassy hops, some herbal tones and grainy malt. Foamy and creamy palate. Quite nothing to do with blond or golden ale, more like imperial pils. Plato was quite interesting (17,6).
