Thatโs the short story of ๐๐ป๐๐ฎ๐๐ถ๐๐ฒ, a 6.5% lambic brewed with ๐๐ฎ๐ฝ๐ฎ๐ป๐ฒ๐๐ฒ ๐๐ป๐ผ๐๐๐ฒ๐ฒ๐ฑ, in collaboration with Forest To Plate.
All over the world and in Belgium, people are looking for solutions to remove Japanese knotweed from nature, so we came up with the idea to turn it into something useful.

Clear gold yellow beer, small aery irregular white head, unstable, non adhesive. Aroma: nice and funky, dry impression, spicy, funk, woody. MF: ok carbon, medium body. Taste: nice, good acidity up front, a little funky, lots of lemon juice, pretty bitter, nice herbal touch, some wood notes. Aftertaste: dry finish, spicy, a bit herbal, bitter, some tannins.

No head but rim, dull ochre-orange beer. Sour, green fruit, white pepper, dry coriander powder, other pulverised spices (ginger, Szechuan pepper,...) Dry, peppery, spicy flavour, with lactic acid, rhubarb, lemon in the finish, pretty pleasing. Flavours as from sweet woodruff/Maitrank. Some good acidthinning and mild -burn. Dry-out effect. Finish shows some body all the same. Another good one. Who the dickens got to try if Knotweed isn't some deadly poison? Whatever, it is a pretty refined lambic.

Pours unclear blonde, small white head. Scent is mild, lambic funk. Bit herbal, but no clue how knotweed is supposed to smell - I can only assume this herbal side is just that. Taste is funky, raw malty, tad lemon acid, bit herbal. Fairly low in intensity on the knotweed, taste more like a very nice lambic to me.
