For this Druivenlambik, we macerated five different lambics on Dornfelder pomace. The weighted average age of the lambics amounts up to more than 27 months. The maceration took over four months. This way, the weighted average age upon bottling exceeds 31 months. About one third of the grains used for the brews are sourced in Pajottenland with our own Cereal Collective.
The final fruit intensity is 469 grams of pomace per litre of finished Druivenlambik.
