For this Pruim, we macerated fresh picked-to-ripeness sweet Mirabelle plums.
Maceration took a tad over four months. For both maceration and blending, we used over 90% of old lambics, both two-, three- and four-year old. The weighted average of this blend upon bottling is therefore almost 25 months.
The final fruit intensity is 304 grams of plums per litre of finished Pruim. The largest part of the fourteen brews used comes from smaller barrels and are 3 Fonteinen-brewed. Of those, more than 1/3 were brewed with Pajottenland grown cereals.

Lots of sour plum and apricot. Pours murky yellow with ok head. Bitter lemon pour. Bottle pour at Snally.

Bottle pour at Snallygaster 2025. Poured a hazy orange color with a small white head. Plum, with plum tartness. Malt, with some sweetness and light acid on the nose. Flavor was acidic, plum. Light sweetness, but not overpowering.

0,75l bottle at home. #21 21/22. Bottled 01.21.2022. amber hazy color, small white head. smells fruity, stone fruits, citric, bit jammy, subtle funk, very nice smell. full body, soft carbonation. tastes citric, grassy, earthy, oak, bit lactic, light funk. finishes lightly sour but rather dry with notes of citrus, grass and lactic notes. on the clean lactic sour side, reminds me more of an American Wild Ale than a lambic, nicely refreshing, not the most complex though. Very good one overall.
Malm� Feb 2024 tasting - sour tart puckering fruity with notes of apricot, plum, overripe Stonefruitc medium to big acidity, woody accents, medium body, tart fruity lingering finish. Very nice.

Bottle. Almost clear deep golden. Quite some Mirabelles but also quetsches and bitter plum skins. Wheat, light sulphur, dry cellar notes, lemon, bread crust, soft white wine vinegar. Quite sour, under medium sweet and bitter. Full bodied. A bit rough but decent stuff.

21|22 BN° 21 Small yellow head, over clear ochre-golden beer. Nose immediately reminding of preserved salted Chinese prunes. Perfumey, fruitscented soap. Dry, bit mineral, faint farmyard; again these perfumey flavours. Fruitacids, and a little lactic acid. Retronasal peperkoek spices. Light body, acidthinnings seems to make it light for its relatively high ABV. Good carbonation. It might be not the best 3F ever turned out, but it is very remarkable, unusual - especially the nose.
