Special cider made for Cidrothèque Joran in Schaerbeek, Belgium.
In the winter of 2021, I paid a visit across the Channel to Albert, Mike and John.
I visited the orchard and chatted with the alpacas, and we spent the evening in the barn trying to come up with the perfect blend for me.
What is a perfect blend for Joran? Well it has a @rosscider identity, ie some barrel aromatics, but it is super fresh and quaffable so you can drink pints and pints of it.
How do we achieved that?
It all started from that tank of Dabinett fermented in rum barrel. Very much my kind of thing. Then we tried blending that with almost everything in the barn and figured out Reinette d'Aubry was bringing a lot of freshness and drinkability while Somerset Redstreak would hold it all together.
The result will leave you with a feeling of déjà vu if you've already had some Ross cider in your life, but "oops, c'est déjà bu !" - the bottle will be empty before you realize it.

Couleur dorée pâle avec un léger voile, col blanc pétillant retombant rapidement et restant sur les rebords.
Arôme est frais de pommes fraiches, acerbe, finement fruité, fleuri, chair de pommes - passage de fût de chêne est discret avec une touche fine adoucie en rétro-nasal avec une pointe de tropical - semble un fût de rhum.
Palais est assez sec avec un effet 'crisp' marqué de pommes avec un léger apport tannique et acerbe des pommes et une fin de bouche avec acidité plaisante. Le passage en barrique est discret, ne visant pas à changer drastiquement le caractère général. Un léger fruité reste en fin de bouche - pointe banane tout en étant très fin.
Un chouette petit cidre pour le meilleur endroit pour déguster des cidre en Belgique.
