A shock of red as if glimpsing a fox dart into the forest’s edge, bursting with it’s namesakes unbridled wild edge and vinous tannin from an 11 month rest in one of our Barolo foedre then refermented for a further two months with cherries.

Malts: Pils, Vienna, Special Aromatic, Carawheat, Raw Wheat
Hops: Nugget, Streisselspalt
Secret Ingredients: Wild yeasts, Balaton and Montmorency cherries, 15 year old Barolo Foedre

250 ml bottle care of a friend. Thanks Adam! Pours a clear rusty copper color with a finger of beige head that dissipates quickly. Big cherry skin and cherry fruit aromas on the nose with a touch of vinegar. Acidity is noticeable on the nose. Tart cherry throughout with some cherry stone and stem notes next to some lemon acidity. Drying finish with a note of neutral oak. Tart finish that leans acidic.

Pours a muddy, dark browned amber. No real head. Scent is full on cherry, marzepan, jammy, mild 'speculoos'. Taste is full-on fruity, tad acetic, high acidity. Fairly dry, oaky, cherries and gingerbread. Lovely speculoos finish.

Reddish-brownish color and a white head. Funky, cherry nose. Taste is sour, dark cherries, faint balsamico, vinous.

Super hazy and deep ruby coloured body with a thick, hazy glowing rich opaque body with a thinnish, single centimetre tall tan head that fades very fast and barely leaves a thin layer on top. Aroma of cranberries (of course), oak and cedar wood, a little dose of sweetness from some fruits and a very tart, cherry and cranberry note that ends very nicely with seemingly a good deal of sugars and malt with some funky brett at the end or spontaneously fermented yeasts. Medium-bodied; Super tart cranberry notes at first with a lot of soured flavours and a good deal of malts right behind, but the oak, cedar and woodsey elements are strong, but the yeast and slight doughy flavours are pungent here at the end. Aftertaste is deep, very tart and soured with the fresh cherries and cranberries in the middle, with a light malt body and richness that comes through and a good deal of sweetness but a crisp dry quality as well. Overall, a very nice, funky, tart and very fruity beer that has some bready and doughy notes, but a lot of malts and a complex cranberry and cherry flavour throughout - very nice. I sampled this 25 cL (reminds me of the Belgian botttles) bottle, purchased from BeerTopia in Omaha, Nebraska on 26-August-2021 for US$5,99 sampled in my hotel room here in [downtown] Omaha, Nebraska, a few hours later on 26-August-2021 and sampled as 'Cranberry In The Snow'.
