Le prime tracce di birra prodotta con l’utilizzo di ostriche risalgono al 1929 in Nuova Zelanda. I molluschi utilizzati in bollitura apportavano un carattere “briny” alle stout e nel processo produttivo veniva introdotto anche calcio presente nei gusci, migliorando chiarificazione e fermentazione. In Inghilterra, durante la Victorian Age era consueto accompagnare le Ostriche (molto meno care di oggi) fresche, ricche e sapide, perfettamente in simbiosi con il finale bittersweet delle Stout.

Per festeggiare il Santo Patrono d’ Irlanda, una delle nostre feste preferite, abbiamo brassato la Westland Row (dalla famosa strada di Dublino dove nacque Oscar Wilde) una Irish Stout con l’aggiunta di ostriche Huitres Cadoret in bollitura, provenienti dalla Bretagna.

Pours black. A couple of fingers of yellowish/brownish large meshed head. Recedes quite quickly, still leaving a layer and a bit of lacing. Average intensity in the aroma: mainly roasted malts with notes of coffee and dark bread, a bit of soft fruitiness (red fruits/fruit cake), a hint of salty/mineral. Simple but well defined, slightly soft. Taste shows a more nitid oyster contribution: roasted malts now less prominent, still taking the main stage but feeling quite delicate, a touch of fruitiness as per aroma, a very nice, well integrated, seaweed-like feel (a touch of green/balsamic, mineral and salty hints). Again, relatively simple, but very well defined and superbly balanced. Sweetness and bitterness are both quite low and none stands out in either taste or aftertaste. A clean, refreshing, slightly green finish/aftertaste. Light bodied, pretty low carbonation brings just the slightest sparkly hint; the beer feels smooth and nicely silky. Super nice.

Tap at King Arthur in Ciampino-Italy. Cola pour with a tick creamy foam. Nose: burnt malty aroma, mineral, salty. Mouth: thin body, salty, bitter.

44cl can from Abeervinum, Rimini, Italy. Pours black, with quite a brown soapy foam, quickly fading trip nothing, though. Aroma is coffee, sea salt. Body is average, with moderate carbonation. Smooth. Taste is medium roasty bitter. Final is still roasty, but not particularly long. Overall, a nice light stout.
