In omaggio al nostro primo EurHop ed al recente viaggio in terra santa francone, non potevamo non brassare una nostra vecchia ricetta rielaborata ad hoc, una German Rauchbier. Dopo i meravigliosi assaggi di Bamberga, abbiamo riesumato scartoffie di una nostra vecchia cotta homebrewed rielaborata con un mix di due Malti Affumicati al legno di faggio, malto Munich e Carafa Special III, acqua di osmosi leggermente addizionata di cloruri, luppolata con Magnum e Tettnang Tettnanger e fermentazione affidata al nostro fidato lievito tedesco.

Una birra dai leggiadri sentori di speck e provola affumicata, morbida e altamente scorrevole. Il mix di due Smoked Malt ci ha permesso di non avere un affumicato monocorde come avevamo testato nelle nostre cotte pilota casalinghe, riuscendo ad ottenere sentori che spaziano dal fumo e cenere piu acri ad altri piu dolci di provola affumicata e speck che sarebbero risultati troppo stucchevoli alla lunga.

L’etichetta è un altro capolavoro della nostra grafica Anna Laura, con una Giovenca (vacca giovane) fotografata dal nostro amico Francesco nei pressi di Porciano.

Il grottesco nome RAUS GIOVENCA proviene da una vecchia storia di paese risalente alla Seconda Guerra Mondiale. Un ragazzo di campagna della zona di Porciano, travestito da militare tedesco, si intrufolò nella fattoria dei genitori per rubare una vacca a suo padre esclamando in un buffo accento simil tedesco “Raus giuvenca …e pure capizzo!” intendendo “via la giovenca con tutta la capezza!”, venendo poi deriso e riconosciuto dai genitori. E allora quale miglior nome se non Raus Giovenca, visto che il suo Raus assomiglia tanto a Rauch… che poi quadra perfettamente essendo uno stile di birra tedesco.

Dark amber to the lightest red, quite hazy, especially per style. Medium sized white head, showing good enough retention and lacing. Average intensity in the aroma with a base of slightly bready caramel malts, an averagely strong, relatively unusual smoked profile (smoked cheese, ashes/campfire), the slightest floral hops hint. Clean. Nicely clean and well defined in taste too, with average flavour intensity as the smell suggested. Caramel malty base with a light bready suggestion, bringing a bit of sweet base. A quite interesting smoked notes profile with smoked cheese (scamorza) most noticeable, some woody/campfire, slightly pungent smokiness, very light smoked ham (speck). A floral hops background, mostly felt in finish/aftertaste, mild but probably more noticeable than usual for the style. Overall medium to low sweetness and medium to low bitterness, very good balance, semi-dry clean finish. Light to slightly above light in body, light to medium delicate carbonation, quite smooth. Good stuff.

can bb 10/23 leggero ambrata in filo velata buona schiuma persistente naso abbastanza affumicato nota maltata un po mielisa corpo medio amaro abbastanza contenuto
