Atrial Rubicite is our barrel-aged wild ale re-fermented with raspberries. Originally released in 2013, it's our first-ever fruit beer.
The process behind Atrial Rubicite is simple but patient. We brew with well water, Texas-grown malted grains, and a blend of fresh and aged hops, then ferment with our mixed culture of brewers yeast and native yeast. We barrel-age for about a year, re-ferment with about seven pounds per gallon of raspberries from Washington, and then naturally condition.

Bottle, shared with others. Ruby with slightly pinkish head. Intensive sour cherries and raspberries. Juicy. Pleasant fruity sourness.

Hazy red, very thin, pink head. Aroma of raspberry, cassis, forest fruit jam, sourdough, lemon peel. Taste has very raspberry, cassis & blueberry; lemon-acidic over sourdough maltiness. Funky, tart finish, very fruity, vinous and acidic. Medium body, slick texture, average carbonation. Dry & mouth-puckering. Amazing stuff.
