Bourbon Barrel Three Philosophers pours a dark cherry-chestnut with a smooth, tan head. Aromas of bourbon, vanilla, roasted malt, black fruits, and caramel lead to flavors of dark chocolate, vanilla, molasses and oak. The mouthfeel is rich and creamy with a long, smooth finish.

16 oz. can, pours a filthy, dark amber with a small beige head. Aroma brings out cola, gentle bourbon, a little syrup, and sweet caramel. Flavour is very strange, with a sort of root beer, cola, bubblegum, and a little booze. Candied, boozy, estery finish. Surprisingly unconvincing for Ommegang.

16oz at Matt's amenity room. Appearance: hazy brown with a tan head. Aroma: cherries, brown sugars, some wood notes. Taste: along the same lines, not that much barrel aging presence. Overall: a good quad I believe.

Can: Poured a brown color ale with a medium size foamy head with good retention with some lacing. Aroma of caramelized malt notes with some light cherry and bourbon notes. Taste is a great mix of caramelized malt, dry raisin, cherry with some smooth bourbon notes with light vanilla and oak notes. Body is about average with good carbonation. Solid base beer to being but bourbon does indeed increase the complexity of flavours.

Refrigerated 16 oz. aluminum can poured into a glass. Clear medium/dark brown with medium beige head. Aroma is dark fruit, medium body, medium/lower carbonation, and little lacing. Taste is dark fruit, cherries, and some bourbon.

A 16 oz can of this brew was located at a bottle shop in New York City a few weeks ago. I’ve been looking for this one, a quad and bourbon barrel aged, the best of all worlds. The can says 9.5% abv, just saying. I’ve got the Chimay glass out on this. The body is a dark caramel with a quite thin, egg-brown head. Carbonation is no issue though. The scent is inviting, dark fruit, cherries and fresh dough. And now, finally I get a taste. I get all three, the quadrupel, cherries and some influence from the barrels. Some fig and hard candy here but the cherry kriek dominates. I can’t say it is great but it is entertaining.

Corked bottle. 2010. Dark brown color with a reddish haze. Oak, bourbon and confit cherry in the aroma. Malty sweet flavor with hint of bourbon and dreid cherry. Other dried fruits. Some oak. Powerful and warming.
