Process: A blend of 1 & 2 year old golden ales brewed with malted barley, malted rye, malted oats and raw wheat. Spontaneously fermented and aged in neutral French oak barrels . The beer was moved onto Ben Alder blackcurrants (Gorgate Fruit Farm, Norfolk) in tank. It remained there for 2 months before spending further time back in barrel. We then blended back with further components and packaged.

Conditioning: Packaged with a small amount of priming sugar for natural carbonation in the bottle. We do not add yeast at this point, or at any point in the process. Bottles laid to rest on side and conditioned until release.

Ingredients: Malted barley (pilsner), malted rye, malted oats, raw wheat, aged hops (whole leaf fuggles, whole lead Saaz & whole leaf strisselspalt), ben alder blackcurrants, water.

Brew season: 2019/2020 & 2020/2021

75cl bottle from Chez Sophie. Shared with Sophie & Ewan on New Year's Day 2024. Pours a crimson-tinged orange amber. Wild lambic aroma, light blackcurrant hints. Good wild accents to taste, thorny moments with a gentle blackcurrant presence. Quite nice but the fruitiness could be more prominent.

Bottle at home. Hazy rich ruby colour with a white head. Aroma and taste are light tart berries, blackcurrants. Crisp body.
