Minne's own sour ale called Woody Wood, this time (i.e. 2022) blended with Cantillon lambic. Egg-white, moussy, opening head settling as a stable ring of foam over an initially clear orangey 'old gold' beer turning misty and more peachy with sediment. Aroma of lots of wet oak wood, yellow plum, sour grape, ripe apricot, vanilla, cooked apples, dried mushrooms, raspberry vinegar, gooseberry jam, wood sorrel, dusty cellar, fresh lemonbalm, stewed rhubarb. Fruity, estery onset, lots of juicy ripe stonefruit effects varying between white peach and yellow plum, side notes of white grapes and green apples, medium carbonated with supple, bit vinous mouthfeel. Strong yoghurty lactic tartness piercing through a smooth bready and lightly biscuity malt body, drying but in a gentle way, leading to a noble woodiness with drying tannic effect but never losing its bright yellow fruitiness and liveliness, even when a leafy hop bitter element is added in the end. More mellow and round than lambic but generally an elegant modern sour ale - the Cantillon effects are there, but fit into a more sedate, yet radiant and supple whole. Approved by not only myself, but also by my girlfriend, Craftmember and Hinke, who does not normally like sour beer styles.

Bouteille 33cl, BB 2032. Léger gusher, com blanc retombant immédiatement, très effervescent. Ce même cas de gusher s’est déjà reproduit sur plusieurs autres versions des Ardenne Wood souvent sans un impact sur la qualité de la bière, mais ce type de soucis reste cependant pénalisant au vu du prix des bouteilles. Version à 8.5%, soit un pourcent de plus que l’ancienne version.
Arôme rend un bouquet marqué de lambic avec ce caractère très Cantillon avec une présence du Gewurztraminer (le moût en tout cas) apporte un léger bouquet fruité exotique oscillant entre ananas, fruit de la passion et litchi mais aussi finement muscée.
Palais est assez sec, marqué par le lambic Cantillon qui malgré ses 30% grignote cette version. Le pétillant est un peu trop haut à mon goût et laisse un fini râpeux et effervescent/mousseux à chaque gornée. Ici, je ressens un côté lambic – offrant des notes de cellier/funk très marquées, cela se coupe avec un raisin Gewurztraminer qui peine à se démarquer, et ce malgré son caractère généralement plus adouci qui passe plus en deuxième plan avec un fruité comportant encore du sucre résiduel qui contrebalance l’acidité/funk du lambic.
