A take on traditional eastern European Kvass- a low alcohol cereal based sour drink.

A mash of rye, spelt and einkorn bread from e5 Bakehouse and the Kernel Brewery's saison then fermented with sourdough starter and saison yeast.

Bottle from the E5 Bakehouse, Hackney. Gold in colour with a faint haze, a middling fizz and no real head. Sharp and tart throughout, with orange juice and a little white bread being the main flavours. It's certainly not like any other kvass I've had; frankly I'd have classified it as a sour ale in a blind taste test. It's ok, but it's not what I expected and well short of Kernel at their best.

28/9/2024. Bottle from E5 Bakehouse. Pours clear golden amber with a small short lasting off-white head. Aroma is grainy, bready, toasted, citric, gooseberry, lime. Quite tart with light bitterness. Moderate body, average carbonation.

Bottle from the brewery online shop. Pours murky orange with no real head. Aromas of sour lemon, dough, peach. Taste is much more sour than the nose would suggest, with an edge of sherbet lemon. Bread comes through at the end.

On tap at the brewery. Cloudy orange with small white head. Easy going, fruity, peach. Juicy. Some moderate tartness. Light bodied.

Bottle from Kernel Taproom, in the garden, 1st May 23. Pours a hazy murky orange. Aroma is tart fruits, cactus, earthy, complex. Taste is sour, tart, vineous, fruit skins and stone, very layered and a huge amount going on for a low ABV beer. Refreshing and interesting

Bottle from E5 Bakehouse. Aroma is sweet and sour before getting sour. Sour dough, citrus and honey. Cloudy pale orange. Head is reduced to a few microbubbles. Heavy sourness. Lemon juice. Actually rather tart. Underlying hints of... erm... vitamin tablet and dough. Light. Slick. Flat-fizzy carbonation. Long dry astringent finish. Enjoyably sour. Clearly not trad.

Strong orange juice coloured with no head. Orange, herbal & chalky aroma. Sharp & short on the tongue with a dry aft. Grainy, orange, lemon & herbal tastes with a sharp acidic finish. Not like other Kvass I've had - more like a saison / gueuze / sour but very interesting & the 3.2% is deceiving.

Bottle. Kernel online. Fully hazy dark orange. No head. Not especially a looker. Sourdough. Tart apple. Brine. Orange pith. Bread crust. Taste is tart and fairly dry, although it’s not without some fruity sweetness. Very refreshing with fine brisk carbonation. Tart slightly sharp finish. Smashed it tbh. First kwass, too.
