The archetypal is pressed then naturally fermented. It is bottled early, before fermentation is complete, to allow it to finish fermenting in the bottle leaving a beautiful natural effervescence, a style called Pétillant Naturel. Cox Pét-Net is light and floral with delightful limey zest characteristics.

750ml bottle from Fram Ferment. Sparkling, pale yellow colour, short-lived fizzy white foam head and aroma of apple, fruity, straw, hint of sulphur. Taste is fruity, apple, with passionfruit hints, fleshy, some tartness, and citric acidity. Light bodied, spritzy carbonation, drying citric acidic finish. Nicely drinkable.
