When making wild beers, you often get a surprise without doing anything else. That is what happened with Hof. Hof was actually brewed to become Erve, but Hof did not want to become that. Hof became ropey soon after the main fermentation. We know that if you are patient it will dissolve itself and so we left the beer in the tank for almost half a year. But at some point we really needed to empty the tanks, because we were going to move. We took the gamble to bottle the beer anyway, even though the beer was still a bit thick, because the taste was really great. Once in the bottle, the beer quickly became ropey again, so we had to wait again.

When the beer seemed less thick, we tasted it and were surprised by the smell. It looked like lambic and the taste had become much more sour! This really doesn’t look like Erve any more, but we found it to be incredibly tasty. Very funky from the longer maturation, acids and bitters that alternate nicely, low carbonation like a good lambic. Here and there we came across a bottle with more carbon dioxide. So these are the fun stories of wild fermentation and also a reference to why we named our brewery Nevel. Our process is like a walk in a misty heath. The final goal is not entirely visible, but we adjust according to the knowledge and insights we have at that moment.

Bottle drunk in Zwanzigerberg. Brown hazy, very small head, complex sour nose, really fat sour flavor with lots going on. Very nice blend of citrus and farmhouse flavors. Really competes with the big name Belgians!

Bottle. Bit hazy dark golden. Funk and Brett up front, sour berries, quite some grassy hops, apricot, soft tannins, crackers, almost like rye. Fruity and spicy with a lot of lambic style funk, but it’s very much not lambic. Solid medium sour, lighter sweet and bitter. Quite full bodied. Complex and interesting, I really like it.

Pours an almost clear golden colour and a small white head with fair retention. Aroma's: sour, funky, light brett, slightly yoghurt. Retronasal it's sourish, light bitter, very light sweet even, light brett. Flavour is moderate sour with a bitter twist. Light medium bodied. Good carbonation. Slightly dry and bitter finish.

Bottle at home, hazy darker golden beer, small head. Aroma is tart, fruit, funky. Taste is the same, sweet, tart, dry, fruity, some real acidity, nice one.

Bottle bought from Nevel at Rotzooi Festival Smaakpark Ede. Color: Hazy golden, thin white head. Aroma: Sweet and tart at the same time, fruity notes of stone fruit, funky. Taste: Again moderate sweet and moderate to over moderate tart at the same time, some lactic acid, fruity notes of peach and apricot, subtle farmbarn wild yeast funk. Nice and refrehing. Great example of Wild Ales' own will and how a 'failed' beer can also turn out to be nice.
