The Spirit of Nature is our first foray Into the exciting, complex, world of continuously blended mixed fermentations. At select times, a portion of the beer is pulled from the tank & aged in oak barrels. While the tank is topped up with fresh bort, cultures & fruit, creating a continually blended fermentation.
Using selected yeast strains, bacteria. fruit & time, we create a unique product that constantly evolves through each iteration, truly reflecting the spirit of nature.

375ml bottle @ monthly tasting, Chez Sophie, Feb 24. Hazed pinkish reddish purple, off-white head. Light cranberry aroma alongside a wild air. Crisp sharp mixed ferm burst on initial sip.. cranberry not too prominent, but pleasant enough. Tart moments. Decent.

19th February 2024; Shrewsbury Gathering, five blokes and loads of beer to share. Cheers Mark for the 375ml bottle of this. Purple hue to the body, pink head. Fruity and fairly tart, cranberries to the fore.

Bottle at home. Reddish purple with a pink head. Aroma and taste are tart to sour cranberry. Quite lively. Crisp body.
