Our German style Helles is brewed using European Pilsner, Munich and Cara malts using a traditional step infusion mash. During the boil, it is hopped using German Spalt Select and Tettnang. After the boil it rests in our copper coolship for 1 hour and transferred to baudelot cooler. It undergoes a cool open fermentation for 9 days using a classic lager yeast. It is cellared cold for several months prior to packaging.

Undated can drunk 2/28/24. Clear bronze-brass. Medium-sized, white head. Moderate retention. Bread and a light apple character, lightly earthy/musty. Kind of similar to the pils I just had from them, and again probably coolship-derived. Honey, biscuit, baked bread and such from the malt with a smattering of herbs and grass from the hops. Good balance. Clean. Again, like the pils, it's probably a bit thinner in body than I'd prefer. However, this is much less an offender and it's only slightly just. Still has a good semblance of malt with a touch of sticky honey on the end, rounded out by white grape, light herb and lots of biscuit and bread. Just like the pils, I wish it was decocted. But it's clean and interesting with a lovely, interesting yeast character.

16 oz. can. Aroma has mild pale crackery malt maybe a touch of honey. Smooth German lager yeast with light sweet grain and homey notes. Really pleasant and well made. Highly drinkable!

Lemon, biscuit malt, and hay aroma. Golden yellow with large white head. Mildly sweet lemon, biscuit malt, and mildly bitter hay flavor. Good body. Very nice.
