75 cl bottle. Blonde, cloudy. Brett, leather, grapefruit and wood in the aroma. Sour flavor with citrus, oak, some flowery hops and a hint of raspberry. Creamy, yet sharp citric mouthfeel. Excellent!

Voici un travail très intéressant provenant d'un assemblage de Zinnebir ayant vieilli 9 mois en fut et d'un lambic. Moi qui suis un pourfendeur de l'acidité dans la bière, j'ai su apprécier cette alliance qui permet aux arômes d'un Lambic de s'exprimer tout en ayant son acidité nettement maîtrisée. J'urais simplement apprécié un alcool un peu plus robuste qui aurait mieux soutenu l'ensemble. En verre, nous sommes sur un bel ambré avec une mousse quasi inexistante cependant. Le nez est tourné sur le lambic mais avec une acidité retenu. Ainsi arômes de vinaigre, de pomme, de fut et de caramel prédominent. A la dégustation nous retrouvons ces arômes avec une astringence certaine et une côté fermier. Nous ne sommes pas loin du cidre fermier par instant par la présence du Brett. L'attaque et la seconde bouche sont bien équilibrées, la seconde étant même assez douce. L'arrière bouche cependant est encore marquée par l'acidité et manque d'ampleur. Le final, terreux et astringent monte à la fois sur l'amertume et légèrement sur l'acidité pour une longueur acceptable. La complexité est assez bonne et l'ensemble très rafraîchissant, et donc parfait pour un temps d'été. Belle prestation.

Bottle courtesy of ggaughan, thank you sir! Cloudy yellow color, huge white head, but NOT a gusher. Aroma of peach, grapefruit. Taste is softly sour fruit, cutrus, subtle banana, grape. Nice complexity. Hi carbonation.

Aged version, stored in cellar for about 4 years
Golden colour, white head, initially firm but diminishing later. Tart geuze aroma, silage, horses, malts, light fruity wine notes. Tart flavour, fruity, wheat, light oak and wood notes. Tart finish, quite astringent, very dry. Lovely and balanced.

75cl bottle @ ZZT III courtesy of Joes. (+-4 years old, stored upright in dark cellar) Slightly unclear yellow / golden color, big white head that lasts for a couple of minutes. Smell sour, hay, cardboard. Tastes incredibly balanced, very balanced sourness, some fruityness as well. Very very good. Suitable medium carbo, medium body. Superb!

Bottle thx to joes@zzt3. Clear pale yellow colour with a big white head. Smells sour, sharp, wine and wood. Tastes sour, wood, lambic, fresh. Takes a few sips to get used to. Palate is dry, long lasting taste, good carbo.

Wow, simply wow.
Pours beautiful with a large, foamy, head. As it slowly fades a sticky and strong lacing is left on the glass. And it never fully fades, left id a cm thick surface covering foam. Basically, there are soap suds in this beer. The color is hazy and thick but not muddy or murky. One cannot see through it but it has a sunshine irradiating hue. Looks like the sun is shining straight through the beer. Just beautiful, especially with the lightly visible carbonation. Aroma is lots of barnyard/cobweb lambic blended beautifully with perfume-like Belgian malts, which are very low key. The lambic part dominates. Further, lightly grassy and light leather, again perfectly melded. Taste is almost all kambic, spiky, cobweb filled leather and a nice long dryness. Throughout the flavor there is a light Belgian pale sweetness lovingly playing off the lambic flavors. Its not in your face with any one aspect. Nice light lemon zest in the back of the throat.
