We then added the grape skins and lees from our natural wine to the cider.
Blended after maceration with a little bit of saison and 3 year old lambic into a nice wine/cider hybrid.

Bottle @MBCC2023, Yellow Session. Clear red, white head. Sour socks and horse aroma. Sourish flavour, more socks, some berries.

Bottle pour at MBCC 2023, pours a cloudy bright ruby red with a small white head. Aroma brings out musty grape skins, apple skins, and wild yeast. Flavour brings out a nice blend of grape skins and apple skins. Oaky and funky. Not quite in lambic territory but it's well-made.

MBCC. Hazy deep red with a white head. Aroma is sweet, malty, apples, red berries and lactic. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 050523

Bottle. Ruby color with pinkish head. Aroma is red grapes, a bit buttery, vanilla, pears. Taste is the same, not super dry, could be more mineraly. Not quite for me.
