In June 2020, we got an offer we could not refuse. The proposal was to buy a bar. For years we’d dreamt of our own place. And we were over the moon when we could finally do it.
For the bar, we decided that tap 2 would be dedicated to one-off staff beers. Beers that each member of staff, taking turns, would design and that we then would brew.
Now the turn has come to Sebastian.
Going full gut feeling, intuitive, and brewing from the stuff that sweet dreams are made of, Sebastian decided to go full-on with an ode to the land of the rising sun and sprinkle it with a bit of Americana. This is a musical beer. It sings. Drum solo!

Can 50 cl. Pours a cloudy yellow with a small, white head. Lactic tart aroma, lemony with a tropical hint. Medium body, sweet'n'tart citrus notes in a sophisticated yuzu kinda way with BIG oaky notes. Dry and tart finish. Quite delicious. 190325

can clear pale yellow, white head. Asian look. yuzu citrussy and sour beery tart and sour aroma, accentuated nicely by the bourbon, bit like a bourbon based sour drink. pretty well done. some slightly herbal bitter grassy notes in the aroma that i could do without. overall, great aroma. flavor is citrussy fruity yuzu with a warming sweet bourbon balance, sour beer, pecan nutty-sweet malts, ending is a bit abrupt, not much hops that can be tasted. overall an interesting flavored sour with enough delicate balances to keep things interesting.

Lys gul tåkete med hvitt skum. Lukter yuzu, blomster og noe vanilje. Fruktig og sur. Smaker yuzu og noe laktose. Kort.

Can. A mild to medium haze on this yellowish gold beer, small off white head. Palate is light and fairly dry, good fine minerally carbonation. Yuzu is upfront from the get-go, lovely mandarin-limey vibe, god I love Yuzu! Singing in harmony is fairly obvious oak induced vanilla and a light but marvellously bourbon soaked ripe fruits. Whilst this naturally falls in the sour style, it ain't that sour, just a mild tartness. Fairly dry finish. Normally, I hate dry beers, but this one works for me, maybe the vanilla oak softness taking the edge off. Dunno who thought that yuzu, oak and bourbon would go together, but I would like to buy them a beer! Cheers!

MBCC 2023 Copenhagen, Red Session. Slightly hazy yellow golden colour. Aroma and Taste of tart grapes, lemon, salt, tart finish.
