Hulda Ottestad was an enterprising woman. To buy a café as a woman in Norway in the 1920s was a bold and unusual move, but that was exactly what she did. Café Alliance quickly became the posh place to be seen in Harstad in North-western Norway. Desiring to take her already thriving business to the next level, Hulda got in touch with a Danish pastry chef to buy a cake recipe that would add extra fame and fortune to her café. The Danish chef came up with something he called ‘The King’s Cake’ – a sponge cake baked with meringue and almonds and filled with custard and whipped cream. In Hulda’s version it became ‘Kvæfjord Cake’, named after her birth place. Soon its popularity went from a regional delicacy to a nationwide favorite, mostly made for celebrations deserving a little extra. A Norwegian musician even wrote a ‘Hymn to the Kvæfjord Cake’.
In 2002 a Norwegian radio program made a nationwide poll to find their listeners' favorite cake, and with no less than 69% of the votes ‘Kvæfjord Cake’ came in on top. With typical Norwegian modesty the cake with the now long forgotten Danish roots was simply announced to be ‘The World’s Best cake’.
So when we here at Amager Bryghus were contacted by the Bådin brewery from Bodø in North-western Norway – only a solid stone’s throw from Harstad and Kvæfjorden - to do a collaboration beer, it only felt natural to revive this cake in a beer. Sweet friendship in liquid form.

Draught @ SKAAL Sønderborg. Pours cloudy very dark brown with airy tan head. Clear aroma of cake, malt and yeast, with touches of dried fruit. Bitter, roasty flavour with touches of coffee and marshmallow, notes of cake and malt, and hints of yeast. Roasty and estery aftertaste with touches of malt. Warming alcohol presence. Not bad!

440 ml can, batch #3009, from Vinmonopolet, Nettbutikken. ABV is 11%. Inspired by the Norwegian favourite cake Kvæfjordkake (modestly known all over Norway as World's Best). Pitch black colour, moderate brown head. Aroma of said cake, also chocolate / cocoa, coffee and vanilla. Sweet flavour with the same elements. I'd prefer a somewhat drier flavour, it would still be sweet enough to accompany a Kvæfjordkake.

Can, 0.44l. Aroma of chocolate, licorice, vanilla, caramel and custard. Pours pitch black color with thin creamy brown head and floating yeast particles. Taste starts with sweet chocolate and meringue, following is roasted malty and a bit ashy with cherries’ note with smooth and warm mouthfeel. Full body, creamy texture and average carbonation in palate. Sweet, but hell of a good…

Can (from Alko web). Pitch black colour, small beigeish brown head. Aroma is coffee, some liquorice, mild toffee, alcohol and some cherries to it. Flavour is cherries, alcohol, liquorice, chocolate syrup and mild toffee tones and some mild nutty tones.

44 cl can from the brewery's webshop. Batch # 3009. Poured into a Snifter. Near black with a thin, tanned head. Sweet aroma with caramel malts, almonds, amaretto cherries, and dark malts. The taste is heavy, sweet. Full body. Sweet finish with lingering cherries. To overly sweet for my liking.
