Second iteration of the collaboration brew with the now closed down Siphon brewery, this time at only 10.5% abv, and in 75cl bottles.
A mash up of both breweries' big stouts, Excuse Me While I Kiss My (oyster)Stout and Cassandra coffee stout.
EXCUSE ME WHILE I KISS CASSANDRA is an Imperial Oyster/Coffee Stout of 10,5% ABV. It is a collaboration brew between Siphon Brewing and Hedonis Brewery.
To create this viscous, creamy and boozy beer, we mashed ridiculously thick with a grain bill which included pale ale, munich, caramunich and chocolate malts as well as roasted barley and oat and barley flakes. And we didn’t sparge. At all. But we did add oyster shells and espresso to contribute even more body.
The first collab was in 2019, but the beer was brewed again in 2022, in a limited series of 1.000 bottles of 75cl.

Clear dark brown to black beer, small creamy beige head, a little stable, non adhesive. Aroma: sweet impression, lots of dark chocolate, dried fruits, alcohol, a bit malty. MF: soft carbon, full body. Taste: good dark roast, malty, coffee, cocoa powder, slightly sourish, alcohol. Aftertaste: bitter, dark chocolate, cocoa powder, dried fruits, overripe banana, a bit sweet, lots of caramel, coffee, a bit sourish.
