Malted barley, wheat, oats. A mixed-fermentation with a combination of yeast and bacteria. May be a blend of beers fermented or aged in oak barrels or foeder. Dry with complex acidity and aroma varying batch to batch. Can be dry-hopped or re-fermented with whole fruit, such as damsons, quince or apricots.

Bottle at home in Hackney - picked up from the brewery taproom. Pours clear gold with a small, foamy white head. Lightly sweet with notes of salty sweat, moderate acidity, some citric bite, decent funk, melon. Light bodied with fine carbonation. Mellow acetic notes to finish, more salty sweat, soft funk, citrus accents, some old wood. Nice stuff.

Bottle at home, picked up from Mother Arch, 31/07/22. Moderately hazed orange golden with a just off white cap that thins to a swirl. Nose carries a light tangy fruit presence, straw, grains, herb, hedgerow, faint red berry skins, vinous. Taste comprises tarte berry fruits, mix of green and red, funk, vinous, light acidic bimble, damp straw, hay bale, lemon rind, dusty oak, mellow wine barrel. Medium bodied, fine carbonation, semi drying close with a light acidic spike. Solid complex and flavoursome saison.

Bright clear gold beer, small bubbly pale cream colour head. Palate is light and fairly dry, decent fine carbonation. Thin malts, the sweetness they provide is pretty much overwhelmed by a gueuzey tartness but it never gets really acid. Some tart fruits in there, as you would expect from a gueuze, little lemon and tart dried fruits. Picking up a touch of pine but otherwise Vic Secret is a bit lost. Dry tart finish. One of the more aggressive BDS.

Botle at home picked up from mother arch. A translucent golden straw coloured pour with a fine loose white head. Aroma is lovely vinous funk, bretty, lemon rind, vanilla, lemon curd, white grape, Flavour is sharp and tangy lemon squeeze, vinous funk, white grape, funky, white wine. mouldy wood, spicy funk, Palate is sharp and tangy, highish carbonation. Good.
