Bottled, swing-top. (4 months past BB-date.) Clear, reddish-brown ale with good carbonation and a good, creamy, beige head. Cascade is the first aroma out of the bottle, and it dominates almost completely. Some sweet malt in the background, and of course it has pine and citrus. The flavor is more complex than felt on the first sip. It starts with the American hops, and their fruityness, and then theres malt, sugar and cardamom. Quite spicey and hoppy finish that lasts for a while. Poured the rest of the bottle into my glass, and the beer turned quite muddy, guess that is due to the long lagering. I started the rating of this beer with a 3.3, but as the bottom of the bottle got closer, I had to adjust it. There’s more to this beer than you notice at first sip. Would like more of this. (060628)

Draught Dark chestnut; yellowish good head. Hoppy and just vinegary - they make an interesting but surprising confrontation. The taste gives again a tad of acetic acid, but it gets covered by the malt and all the hops. The MF, however is a tad too vinegary - aggressive. It’s really well-bodied, and yet tastes thin. I do not think this taste was the original idea.

2007-11-01, Cask Conditioned at Ølbaren, Copenagen, 8-5-9-5-17=44
Cloudy red amber color; persistent thin head. The aroma of the cask version mixes the caramel and hops to a new toffee component, fudge. The natural temperature allows to appreciate the true flavor, good malt-fudge-toffeen sweet but not too much, with fruity and resiny hops. Excellent!

2007-11-01, draught at Lord Nelson, Copenhagen, 7-4-8-5-16=40
Cloudy red amber color; thin creamy head. Good aroma, with malt, hops and bitter oranges. Good body strength, very good malt flavor, sweet, with caramel, balanced in an elegant way by a quite powerful and well aromatic hopping, bringing in very good fruits (ripe grapefruit over all) and some subtle resins. The final too is balanced, quite strong and long. Very good.

Cloudy dark amber color; compact head. Pleasant malt and hop aroma, even more evident in the taste; the mouthfeel is thick, almost oily; the maltiness is strong, with a lot of caramel and good hopping, both for the quantity and the quality. Very good.

Bottled. Red brown colour. A pretty, lasting head. Hop in the nose at once. Taste of candy and Christmas spices. The aftertaste is utterly bitter and sourish. Found it to go well togeter with food.

Cask at Ølbaren. Dark brown in colour. Thick off-white head. Spicy, hoppy aroma. Flavor is malty and hints of spicies and it leaves you with a very hoppy aftertaste. Not what i call a christmas beer but a very good beer.

(On tap) Unclear, dark amber with a creamy, off-white head leaving some laces. Spicy, lightly perfumy aroma that reveals the coriander. Sweetish and malty with distinct notes of oranges. And of course it wouldn’t be a Ølfabrikken-brew if it wasn’t strongly hopped. 281005

2005: Hazy brown beer. Hoppy aroma with some grapefruit. Light malty flavour with a distinct bitter finish. 2006: Score unchanged, it is that good. I notice more coriander taste, but that might just be my tastebuds that evolved. 2007: Still great, still filled with coriander. 2006, tasted 2007. Makes my nose very happy. After a year it’s still got the IPA feel, and I love it! And I love it! And I do LOVE it!

An unclear red-brown beer with a small brown head. The aroma is sweet hoppy and malty with light notes of caramel. While the flavor is sweet malty with a light alcohol presence, and even less spice presence, leading to a dry woody end. I’d like the spices more pronounced in my Christmas beer.
