IPA史を塗り替えた緑の衝撃！一世風靡したあの時代の西海岸IPA

【名前の由来】
中世イギリスに端を発したIPAは、現代に新大陸で花開き、様々な人の手によって変化、多様化してきました。あらゆる歴史においても共通してある、これまでの枠を突き抜け、流れを一気に加速させるような存在の登場。IPA史でいうならば、2000年代初頭のウェストコーストIPAがそれに当たるだろう。強烈な苦みに爆発するような柑橘香、振り切れるほどのホップの個性に今までのIPAは何だったのだろうかと人々のIPAへの印象を一夜にして、変えてしまうような衝撃的な登場でした。
【醸造家の声】
これまでのIPA史を紐解くように、時代とともに変化するIPAを順を追って作ってきた本シリーズですが、今回は、アメリカ西海岸が世界のホッピーなビールの中心地だった時代に遡ってみました。柑橘系の香りと松のようなアメリカンホップを大々的に取り入れたペールエールが人気を博し、当時のブルワーはこぞってビールにどれだけのホップを入れることができるかを実験していました。

このムーブメントの中心になったのは、間違いなく西海岸、主にサンディエゴやカリフォルニアエリアにあるビール醸造所でした。透明度は高く明るい色味とドライなボディが特長の今日の西海岸スタイルのIPAとは異なり、当時のオリジナル版には大量のクリスタルモルトが使われており、大量に投入されるホップをしっかりサポートできるだけのボディ感がありました。

この破壊者では当時の味をただ忠実に再現するのではなく、よりいっそう色とボディを特徴づけるために、通常よりも多くのクリスタルとデキストリンモルトを使用しました。ドライさの度合いは現代の西海岸スタイルに近いですが、使用したホップの多くは古典的な品種を選びました。また、IBU（苦み指数）は、苦味も通常のIPAよりもはるかに高い80に仕上がり、IPAらしい懐かしい爽やかな苦みを感じてもらえる設計です。

その結果、新旧の西海岸IPAの個性をバランスよく取り入れたウェストコーストIPAになりました。柑橘や松っぽさ、弾けるようなホップの香りがやや全面にでて、モダンなトロピカルフルーツの特徴のホップとのバランスが絶妙です。オリジナルよりやや濃いめの色味とドライな口当たりと印象的な苦味で当時の西海岸の味わいを表現しています。

We went back in time for this installment of our IPA through time series to when the West Coast of the USA was the epicenter of hoppy beers in the world. Pale Ales featuring citrusy and piney American hops had come into their own, and now people were experimenting with how many hops they could get into a brew.

The leaders here were undoubtedly breweries on the West Coast, mainly in San Diego and other parts of California. Unlike the West Coast-style IPAs of today that are more clear, light in color, and dry in body, the originals had a large amount of Crystal malts to provide body to support the heavy hop loads.

While not a clone brew by any means, we did use more Crystal and Dextrin malts than we normally would for more color and body. Dryness is more in line with modern West Coast styles, but hops are for the most part quite classic. At 80IBUs, the bitterness is also much higher than what we would typically aim for in an IPA.

The result is a nice balance of old and new school West Coast IPAs. Piney, citrusy, and dank hops dominate with a touch of modern tropical fruit character for balance. The color is on the dark side but with a dry finish the bitterness really comes through on the palate.
