In 2014 we grafted a row of Brown Snout & Chisel Jersey trees; two historic bittersweet varieties full of character. Their first crop, in 2019, was fermented in an oak cask, and produced a powerful, chocolatey, delicious cider. But all that tannin needs time; so we let it rest until the second crop in 2021. Those two barrels from 2021 were softer, gentler and blended with the older cider, produced a drink with depth, complexity and the joy of both young and mature cider in the same taste. This is a cider for the discerning drinker.

750ml bottle from Cat in the Glass. Golden colour, some short-lived bubbles on top and aroma of apple, woody, funk. Taste is tangy, tart, apple, woody, oak, funk, leather, barrel notes, with bittersweet earthy tannins. Medium bodied, low carbonation, drying oaky tannic finish. Nicely drinkable.
