Discovery apples are among the first to ripen in the UK and on a beautiful sunny day at the end of August we sent them to the press, the juice fermenting as it went into tank. We later blended in a 3% component of precious Foxwhelp, to amp up the acid and red fruit elements of the cider, before bottling.

Disco Nouveau showcases the Discovery apple in its purest form. Wild fermentation has brought out its gorgeous aromatics, all strawberries and cream and fruit laces, and with its lovely berry fruit lassi creaminess and gentle sparkle, it’s super fresh and uber-crushable!

Bottle pour at the London Cider House. Hazy yellow with no head. Apple, apple skins, some stone fruit, touch of funk, medium tartness.

Poured from the tap. Hazy gold with small white head. Apple core, very very feint funk note, dry-ish finish. Decent.

25cl shared with Ryan. Appearance: hazy blonde, no head. Aroma: nice apples, some sweetness, a bit tart. Taste: along the same lines, nice apples, very dry. Quite unique finish of the sophisticated fresh dry apples. Overall: nice one.

750ml bottle from Little Pomona. Hazy gold colour, white foam head that dissipates away and aroma of apple, fruity, peach, citrus, zesty. Taste is tangy, tart, apple, fleshy, with stone fruit, strawberry hints, alittle funk and some zingy citric acidity. Medium bodied, spritzy carbonation, drying fruity tart finish. Nicely drinkable.
