Swordfishtrombones – just another sucker on the hopvine.
A next one in the funky saison series, this time playing with 50% wheat, malted and unmalted, pilsnermalt and several handsfuls of good old vienna. Both sacc. and brett. yeasties picked for ultimate dryness, and an old and somewhat new world hopscombo to top it all off.

Wheat beer (because half of it consisting of wheat) refermented with Brett and presented as a 'funky saison' with a name referring to the old Tom Waits song. From a 75 cl bottle with crown cap shared with Goedele, thanks Niek for the bottle! Slow gusher, but nothing dramatic. Snow white, moussy, coarse, large-bubbled, opening head, misty straw blonde robe with beige-greenish tinge, murky and cloudy beige in the very end. Aroma of overripe onion, moldy lemons, withering leek, wet clay, spoiled cucumber, wet old white bread, yoghurt, old vegetable soup, raw turnip, chalk, white soap, withered cut flowers, Camembert cheese past its prime, sweat. Crisp, dryish onset, spoiled cucumber again, green pear, some Granny Smith in the background, very spritzy and minerally carbonation; supple straightforward pale malt core, cereally and a bit grainy, under growing 'sweaty' funkiness and soft white-yoghurty tartness. Retronasally, those moldy lemons, withered cut flowers and spoiled green soup return, along with a more refreshing floral element; the hops provide a lingering bitterness in a slightly earthy way too, superseding a chalky and soapy (wheat?) flavour. Generally dryish and quenching, but a bit thin even for a beer below 5% ABV; the 'funky' aspect here has a Bretty side (stale sweat) but the hops do not benefit from it, combining into something like withered leek and moldy lemons - not the only beer that ends up this way by far, but from Kromme Haring I was expecting a bit more 'oomph' and refinement. Could have been more powerful as well as more elegant, I think, but it passes.

Tap at Arendsnest, Amsterdam, 12th October 23. Pours a clear straw blond beer. Aroma is light rose, funk and yeast. Taste is aromatic, rose, funk, tasty

75cl Fles, dank Harmen! Mistig gouden kleur, witte kraag. Funky, fris, Brett, heel licht kazig, citrus, citroenschil, verbena, gelaagd, bitter, droog maar toch juicy. Lichte body. Topklasse.
