This traditional witbier is a passion project for our staff. We collaborated with our friends at Valley Malt (MA) to produce ‘wind’ malt (also known as ‘air-dried’ malt) for Adem–a traditional, very light malt that was historically dried in the lofts of Belgian barns, absent any kiln, and used for witbier production. Notes of orange peel, peppercorns and floral hay meld with the wheat-forward base to provide a taste that hearkens back to witbier’s origins.

Lemon, coriander, wheat malt and straw aroma. Hazy pale yellow with large white head. Mildly sweet lemon, coriander, wheat malt, and mildly bitter grass flavor. Okay body.

Pretty good witbier. Some florals, coriander. Slightly hazy yellow with OK head. Light bitter finish, some sweetness. Tap at Dominion.

Draft pour at Dominion Wine and Beer. Poured a hazy golden yellow color with a small white head. Aroma was grain, light yeast, wheat. Flavor was light yeast, grain.

Brewery draught, 7/13/23. Very cloudy, pale-golden. Large, well-retained, white head. Dainty esters and mellow coriander with wheat and very mild citrus. Just all around polished and mellow nose. Soft, wheaty, good structure/depth and attenuation. Mellow, flavorful coriander, playful honey-like malt and esters. Mineral and wheat finish with gentle acidity.

Can (4/16/21) pour from trade with AirForceHops via Candia Road Convenience. It's a hazy dark yellow with thin cap of off-white head with poor retention and spotty lacing. Aroma is strong wheat, lemon, bubblegum. Taste is strong wheat, lemon, bubblegum, grains of paradise. Mouthfeel is medium bodied with thick, frothy texture, soft carbonation and finish as taste. Overall, a very good representative of the style.

16 oz. can. Aroma on this one: orange peel, lemon, yeasty character. Flavor has the lemon, yeast phenols, and the mildest coriander finish. Spot on representation of the style and well made.

Pours hazy dark yellow into a tumbler. Bright white micro head with excellent retention recedes leaving scant sheets. Bubblegum aromas. Soft with sweet bubblegum, biscuit and coriander upfront turning to clove in the mild, medium length finish.
