For this fully organic grape lambik, we macerated Grüner Veltliner grapes on one- and two-year old lambik. The grapes were sourced from Christoph Hoch, a Demeter-certified wine maker from Hollenburg an der Donau, Austria.

Flaska från 3F. Aprikosfärgad disig vätska. Princip utan skum. Stramt syrlig och oxiderat smak. Doft och smak av druvor, vitavinbär, omogna gula plommon och ananas, mineraler, fuktig hö, trä, plommonkärnor och beska plommonskal. Riktigt syrlig och frisk. Gott

Bottle at 3F. Pours totally clear yellow-gold with a foamy, white head. Lightly sweet with notes of white pepper, lemon peel, mellow acidity, drying pale wood. Light to medium bodied with fine, massaging carbonation. Quite dry to finish, more white pepper, pale wood, citrus peel. Enjoyable stuff.

New, apparently fully organic grape lambic by 3 Fonteinen using Grüner Veltliner, an Austrian (and Hungarian) white grape variety; bottle shared at Open Beerdays 2023. Snow white, medium thick, dense but slowly opening head on a hazy apricot blonde robe. Aroma of indeed ripe white grapes, hazelnut note, old wood, green apple, damp hay, unripe pineapple, white currant, minerals, yellow plum, grape skin, lime flesh, unripe pear. Very fruity, crisply tart onset, sharpish white currant and green gooseberry effects softened by the honeyed sweetness typifying the Grüner Veltliner but tartness prevails, accentuated by medium strong carbonation with minerally side effects; vinous body, soft lactic tartness blending with the sharper fruit acidity into a ‘yellow-green’ fruitiness reminiscent not just of white grape but also crabapple, green kiwi and yellow plum, in the end dried by woody and grape skin and seed tannic effects. Grape fruitiness generously persists in the finish, paired with lingering lemony acidity and a touch of old hops in the finish. Acidic but remaining elegant and very palatable, this is another exemplary grape lambic by 3 Fonteinen.

0,75l at the Lambic-o-droom. Yellow hazy color, small white head. Smells vinous, earthy, stone fruits, bit leathery. Nice to very nice smell. Full body, soft carbonation. Tastes grapes, honey, bit leathery, earthy, flowery. Finishes light sour and tad sweet with notes of grapes, honey and flowery notes. Very good, rather on the heavy side, could be a bit more spritzy. Very good one
