This is our debut wild yeast fermentation; milled Cox apples left overnight to develop flavour before pressing and natural fermentation, then blended with the tannic King Jim. We bottle this up and warm it to initiate fermentation in the bottle to produce a lovely, clean, dry flavoursome sparkling cider.

750ml bottle from their online store. It pours clear oily golden - yellow. The aroma is fresh, bright, zingy, crunchy apple, twist of lemon, white wine, hay, must and dry oak. The taste is initially, crisp, firmly dry, touch of pucker, white vinous, tart white wine, crunchy green apple, gooseberry, tannin, leathery apple skin, dry oak, some acidity, minerality, chalkiness and a nip of alcohol. Finish is dry and tannic. Medium body and still. Nice to see these guys try something like this. Like apple wine.

750ml bottle from Cairn O'Mohr. Golden straw yellow colour, no head and aroma of apple, hay, funk. Taste is tangy, apple, fruity, straw, hay, hint of funk, and mellow acidity. Medium bodied, low carbonation, dry finish. Nicely drinkable.
