Imperial Stout aged in Angel’s Envy Bourbon Barrels then Finished in Ruby Port Wine Barrels

Introducing the newest addition to the Bourbon County family: our first-ever “Cask Finish” stout. Inspired by the innovation of our friends at Angel’s Envy, we embarked on a journey to further develop the complexity of barrel-aged stout by introducing never-before-used finishing barrels. The beer starts in freshly emptied barrels that once held Angel’s Envy Kentucky straight bourbon. After aging in those for a year, the beer was transferred to a second set of Ruby Port wine barrels where it patiently matured for another year. By replicating Angel Envy's finishing process, we refined and amplified the flavors of cherry, spice, and cocoa within this aged stout. Bourbon County Angel’s Envy Cask Finish Stout is a testament to our legacy as the originators of bourbon barrel-aged stout.

22 oz bottle. Aroma is lightly jammy red grape, soft oak, chocolate. Red grape is subtle but lasts throughout the sip. Bourbon is a mild warming after the swallow. Texture is velvet smooth. Wouldn’t guess it was 15.5%. Awesome!

Bottle shared at tasting. Opaque black color, small off-white head. Strong aroma of malts and liquor. Flavor is malts, soft roast, bourbon, raisins. Solid.

Bottle, 500 ml. Shared with Max, kasjer27, MiroB and Luka. Nice bourbon, chocolate, some sherry, dark fruity notes, some dried fruit, moderate sweetness, some bitterness in finish. Oily.

Bottle thanks to Rainer. Pours a dark brown with small tan head that lasts. The aroma is port, licorice, roast, wood, bourbon. Slick body, similar flavors to nose, nice sweetness, nice booze, enjoyed this.

Bottle pour at Clybourn, 12/1/23. Clear with ruby garnet highlights. Small, dark tan head in the form of minimal bubbles on edge. A sweet port edge but it's minor and tastefully done. Not obvious. Rich dark fruit, pepper and graphite. Dark chocolate and light vanilla lingering with no alcohol. Lightly sweet port undertones with a light char from the barrel throughout. They balance each other nicely. Raisin, vanilla, prune, not too heavy, with light chocolate and more gentle port on the finish. No booze noted. Sweeter than the eagle rare, not by a lot.
