Jerome foraged the Anise and Hysope near to the BFM brewery in Saignelegier, Switzerland and smuggled them across in his case alongside some of the BFM signature house yeast strain.

Bottle. Pours unclear yellow. Aroma is anise, plants, greens, dust, lemon peel. Body is medium, fizzy carbonation, softly sour and salty, still anise. Superbly balanced and refreshing. Good!

On keg at Six Degrees North, Edinburgh. Appearance - pale lemon and lightly lacy. Nose - apple and lemon. Looking for anise. Taste - more apple and lemon but again no anise. Palate - close to medium bodied and tangy. Dry-ish tangy finish. Overall - missing the anise.

Keg at six degrees north Edinburgh. Pours clear golden, nose is herbal, toffee, grassy, taste is juicy fruit, grassy, musty toffee.

Keg at Six D Abz. It pours clear straw yellow with a tiny white head. The aroma is doughy bread, cracker, fragrant, star anise, straw, hay and a bit of barnyard. The taste is crisp, dry, toasty grain, pickled onion monster much, spoiled yoghurt, earthy, wood, definite aniseed vibe, granny smith apple, cider vinegar and some acidity with a short, dry finish. Light body and fine, prickly carbonation. I'm not sure the flavours come together harmoniously. Lacks some depth also. Quite so-so.

Tap at Dynamo Bar, Brussels. Pours golden. Aroma is sour, lacto, lemon. Flavor is sour, lacto, popcorn, watery. Overall: drinkable, but that kind of kettle sour I usually don't like.
