Blend of organic cider apples of Normandy that we went to pick up in october 2022 with handpicked local Belgian apples from our own trees and local apple trees πππ It is spontaneously fermented for 3 months (without added yeast) and aged for a couple of months in used wine barrels. De Mederie is a cold, badly insulated place in winter which is perfect for the fermenting & ageing cider and mead, just a bit cold for the brewer.

Clear gold yellow cider, no head. Aroma: lots of fresh pressed apples, apple juice, some green apples (Granny Smidt), slightly funky. MF: lively carbon, medium to light body. Taste: lots and lots of apple juice, nice acidity, apple acid, pretty tart, a little smoky touch, pretty dry. Aftertaste: some sweet apple juice, lots of sour apples, a bit lemony. Very pleasant one!
