The Funk Dungeon mixed fermentation project evolved from our love of all things sour, breathed and barrel aged! Each small batch release is carefully selected and blended to create a complex, unique beer.

Barrel aged bretted tart saison, with a base of heritage grain Plumage Archer for a complex malt undertone. Crystal Rye adds a residual spiciness and sweetness. We dry hopped this beer in barrel with one of our favourite new English hops, Olicana, which brings flavours of ripe peaches, mango and a deep herbal character that balances with the oak. Aged for 11 months for a gentle bitterness accompanied with low carbonation to round out the overall finish of the beer.

Panda courtesy of mR_fr0g, cheers Fergus! Gluten Free. Orangey amber colour, some bubbles on top that dissipate to a thin bubbly rim and aroma of floral hop, fruits, herby, funk. Taste is sour, flowery, with light notes of pale malt, grain, herbs, wood, spice. Medium bodied, light carbonation, dry sour finish. Nicely drinkable.

Panda at home, thanks to Pappa Fergus, 07/01/24. Lightly hazed golden amber with an off white head that dissipates edgewards. Nose is funk, dry rot, subtle decaying fruit notes, herb, hedgerow, spice. Taste comprises hay bale, damp wood, funk, apple skins, herb, stewed fruits. Medium bodied, fine carbonation, semi drying close with a balanced light acidic bimble and funk laden climax. Decent effort at 5%... subtle and understated at times but ultimately delivers.

Bottle at home picked up from Hotm. A light hazed burnt orange coloured pour with a decent off white head. Aroma is semi sweet, autumnal leaves, apple, yeast esters, leafy, some brown sugars, Mellow funky apple, light tart. Flavour is composed of semi sweet, light tart, leafy hop, light spice, bruised apple, dried apple, mellow funk. Palate is semi sweet and tart, mellow carbonation. Quite interesting.
