In April 2022, a few of our team went to the Basque Country on a culinary trip. At a lunch at the Asador Extebarri, we met up with Marco Tinessa, winemaker-owner of the magnificent Ognostro winery, Campania, Italy. After a few tasty bottles of wine and geuze, we decided to work together.
For this small batch Druif, we macerated Aglianico pomace for over four months. We used three-year old lambikken only, rendering the weighted average age of the blend to over 38 months upon bottling. The final fruit proportion is 384 grams of Aglianico per litre of Druif.

Bottle at Palace Hall 07/09/2024 Malmö September tasting - aroma of red grapes in the nose, taste follows, lots of grape, funk, grape washed wooden accents, barnyard, lingering grape infused finish.

Bottle @MBCC 2024, Blue Session. Slightly oily clear red amber, no head. Funky, fruity, leathery aroma. Sour flavour, acetic fruity, funky. Nice rough finish.

Aroma: red apple, leather and funk. Taste: sour red apples, funk, brett and barnyard. Light acidic. Next one, please!

Mikkeller Beer Celebration, Blue Session. Hazy orange golden beer. Aroma of sour red grapes, apples. Taste of sour apples, red grapes, berries, funk.

MBCC. Hazy red with a tiny white head. Aroma is sweet, malty, red grapes, wood and barnyard. Flavor is quite sweet and moderate acidic. Dry and moderate acidic finish. 100524

Grape lambic made with the pomace of Italian Aglianico grapes, a very old and relatively unknown southern-Italian ‘cépage’, macerated in old lambic. Moussey, pale off-pinkish, open head on a misty vermillion beer with deep copper glow – paler than typical for a grape lambic in general (at least one that is made of blue grapes), but normal considering only pomace was used, and frankly a beautiful colour to behold. Aroma of dry grape skins and grape seeds, dry crumbling earth, rosehip tea, minerals, halfripe red plum, red apple peel, wet leather, rough bluegrass, faint swimming pool, Martini Rosso and wet rubber notes in the background. Crisp onset, slender but effective fruitiness, clearly more grape skin astringency than grape flesh juiciness, side hints of red plum, cherry tomato and red apple, carbonation very active and very minerally – with almost limestone or ‘petit granit’-like effects. This minerality persists through a lactic, dry-tart, grape skin-coloured middle, ending in warming vermouth-like alcohol, where lemony sourness continues to add dryness. Astringent, dry yet still elegant and fruity ‘pomace lambic’, very minerally and distinct; not lacking in complexity, and even though I personally still prefer full-grape lambics, it must be recognized that pomace, when in good hands, has the potential to create beautiful dry fruit lambics (as Cantillon and others have also shown already in past years).

Sour and fruity, clear barrel presence. Smooth, dry, a bit sweet. Tastes young, very nice.
