Dit bier is blend van een saison gebrouwen door Dok Brewing Company te Gent en een 1 jarige lambiek van brouwerij De Troch. Het resultaat is een wilde saison van 6% vol.alc.. Fris door de subtiele aciditeit, doordrinkbaar doch complex door de veroudering van het bier en de ondersteunende houttoetsen. 9 maand gerijpt op eiken vaten waar voorheen Chardonnay wijn heeft op gelagerd. Met smaakevolutie. Gebotteld op 29/09/2023

Bottle from TastToe. Color: Lightly hazy golden, large frothy white head. Aroma: Spicy Saison yeast and fruity Lambic. Taste: Nice blend of a bit spicy Saison and fruity Lambic. Some (old) hop. Fruity ripe white berries and white grapes, citrus fruit. Subtle tannins and funk. Medium body, just below average carbonation. A bit Champagne-like. Moderate sweet and tart, very light bitterness. Nice one.

9/III/24 - 75cl bottle, shared @ DOK Brewing Company (Gent), BBE: 2030, bottled: 29/IX/22 (2024-156)

Clear orange blond beer, big creamy off-white head, stable, a bit adhesive. Aroma: nice, lots of citrus, fruity, lots of grapefruit, a bit woody, floral touch, lots of brett, funky, wild. MF: ok carbon, medium body. Taste: nice clean acidity up front, a bit funky, little bitter, fruity notes, white grapes. Aftertaste: dry, fruity, floral notes, a bit spicy, white grapes, some tannins. Very nice one!
