When Beccy & Sam took on the home orchard (Wilding Orchard) in 2018 it was very heavily skewed towards bittersweets with almost no sharps or bittersharps. In order to rebalance it to better suit natural cider making they embarked on a process of top working (grafting) in wonderful varieties such as Court de Wyck, Foxwhelp, Kingston Black and Porter's Perfection, with other varieties coming later. As well as these acid led varieties the blend is comprised with an assortment of bittersweet varieties all from the one orchard.

This cider is a first taste of the new look orchard, made in the Rural Method this retains some sugar to dance on the tongue but it has plenty of very good quality grippy tannin which give intrigue and complexity. It's very delicious and drinkable without being at all simple, and this is an excellent cider for good eating.

Highly drinkable overall. Nice balance between sweet and juicy and dry and musty. Mild acidity. A little salty bite. Mellow bitter skins. Solid.

750ml bottle from Fine Cider Co. Orangey gold colour, thin white rim and aroma of astringent funk, apple. Taste is sweet, apple, orchardy, leather, meaty funk, wood, with drying tannins. Medium bodied, light carbonation, drying medium tangy tannic finish. Nicely drinkable.
