Sparkling Medium Sweet Keeved Cider

This keeved cider rests on the shoulders of older trees (at least 30 years) in grazed or mown Herefordshire orchards. Tom trusts the fruit is the best for keeving, which is a technique to produce slower fermenting and potentially naturally sweet ciders. The varietals are mixed cider apples but Sheep's Nose, Yarlington Mill, Michelin, Dabinett are key. An unfiltered version of TNBT from 2022.

A dense, cloudy juice bomb with a peachy colour and juicy apple and peach taste with a hint of refreshing bitterness. Like drinking sweet liquid cider apples.

Panda at home thanks to Ed Danlo. A hazed bright goldenorange coloured pour with a lasting loose beige head. Aroma is meaty apple, salty, loose wheat, grass, . Flavour is composed of semi sweet, juicy apple, toffee apple, grassy, bark, super juicy for the low abv. loose wheat. Palate is semi sweet, juicy , flaked, bitty. moderate carbonation. ok.

Panda at home, thanks to Ed Danlo, 17/04/24. Hazed almost carrot juice like orange with a thin off white cap that stays as a swirl. Nose is dusty apples, straw, sugar cane, apple pulp akin to fresh breakfast juice. Taste comprises juicy apple pulp, demerara sugars, light tannins, orchard fruits, peach. Medium bodied, fine carbonation, semi drying close. Solid flavoursome stuff if perhaps a touch on the sweet side for my liking.

750ml bottle from Fine Cider Co. Hazed pale orange-gold colour, some white bubbles on top and aroma of peach, apple. Taste is sweet, ripe apple, juicy fruity, with some stone fruit motes and tangy bittersweet tannins. Medium bodied, soft carbonation, sweet & drying tannic finish. Nicely drinkable.
