Bug Farm is a revisitation of our 2014 Hibernal Dichotomous recipe. We pressed juice from Texas watermelons, refermented it in farmhouse ale brewed with rosemary, lavender, and mint, and then naturally conditioned it through refermentation in the bottle.
We processed about a ton of watermelon by hand over the course of two days at Jester King. We diced the watermelon, pureed it, then added it straight to the tank for re-fermentation. The rosemary, lavender, and spearmint were all added cold side as well.
Bug Farm has roots at Jester King going back over a decade. It continues to be one of the favorite beers we make. Available at Jester King now (open seven days a week) and self-distributed around Austin starting today!

Fox River House, 3/9/24. Slightly hazy amber, medium tan head, average retention. Aroma of melon, apple, grapefruit, mildest funk. Taste is melon, apple, berry, funk. Dry, decent.

4oz pour at Ridgewood. Pours clear blonde with white head. Aroma has moldy fruit and saison yeast. Flavour has moldy citrus, saison yeast, some wood. Not great.

Rosemary is pretty potent here. More than I typically hope for in a beer. Also I'm not sure that watermelon is the best combo with it. Golden pour with decent head. Herbal finish. Tap at Sovereign.

Batch #3 bottle from Livonia Liquor. Pours a clearish straw gold with a full finger of white head that lingers. Watermelon juice and rind right off the rip. As it warms the lavendar and rosemary appear. Palate shows mineral, watermelon and JK funk with lavendar on the backend. Dry finish with a nice summery feel with the watermelon and mineral notes. Really solid.

A lightly hazed golden saison with a thin lacing white head. In aroma, sweet fruity malt with light lemony notes, tropical fruits, light mineral notes, pleasant. In mouth, a nice sweet fruity malt with light watermelon, light lactic notes, light cucumber, pleasant. On tap at Beer Run NYC.

Draft at The Bar on 22 (NJ Wine Seller), 3/27/23, and crowler at home the following day. Clear gold with a never stream of bubbles and a bright white foam of head that lasts forever. Funky, floral, earthy, lemon, grass, watermelon, and herbal. Grain and spice. Apple skin, tart peach juice. About 40 other things. Damn there's just a ton going on here. This is a damn good beer. Drinking beautifully right now.

On tap at Garden Path, pours a hazy blonde with a small white head. Aroma is sure unusual, with essence of watermelon, plenty of rosemary and lavender, and of course bugginess. Flavour is full of fermented out watermelon, rosemary and lavender, with wild yeast and lots of musty notes. Can't say I'm overly enthused about this, but it's not bad. Fun experiment, just not all that enjoyable.

Blend #1. Really really nice spring beer. Unfortunately it's still winter I think or extreme climate edition fall but still really nice blend of the flavors of 🍉, rosemary, mint, without any of them overpowering the other and solid light tart finish.

Hazy pale yellow colour, white head. Aroma of malts, hops, fruity, strong mint. Minty flavour, quite fresh, watermellon, rosemary, malts and peppermint. Minty finish. Nice and interesting.
