Bug Farm is farmhouse ale made with rosemary, lavender, and spearmint and refermented with watermelon.
Bug Farm is a revisitation of our 2014 Hibernal Dichotomous recipe. We pressed juice from Texas watermelons, refermented it in farmhouse ale brewed with rosemary, lavender, and mint, and then naturally conditioned it through refermentation in the bottle.
We processed about a ton of watermelon by hand over the course of two days at Jester King. We diced the watermelon, pureed it, then added it straight to the tank for re-fermentation. The rosemary, lavender, and spearmint were all added cold side as well.
Bug Farm has roots at Jester King going back over a decade. It continues to be one of the favorite beers we make. Available at Jester King now (open seven days a week) and self-distributed around Austin starting today!

Bottle @ Drink Rich’s American beer, thanks to Omgrich. Anno 2013. Dorée sur léger trouble, col fond blanc. Arôme met très bien en avant ce côté menthe verte qui arrive en léger rétro et laisse ample place au romarin pour cependant rester en balance. Palais est étonnant et assume sa description d’étiquette. La pastèque est bien là , alors que je m’attendais, vu sa concentration en eau, à qcq chose de minime. Ici, le fruité est bien présent et s’accommode aisément du romarin et de la menthe. Effervescence est légère avec un fini houblonné fruité plaisant. Sympa, complexe même avec deux ans d’age.

Clear pale yellow to blond beer, small aery irregular head, unstable, falls down quickly, non adhesive. Aroma: very funky, fruity, bit sweet, sourish, lemon rind, spicy, rosemary or something. MF: soft carbon, medium to light body. Taste: I do get the watermelon now, lots of it! Little spicy touch, lemony. Aftertaste: more watermelon, nice tart finish, bit of alcohol warmth, fruity ending. By no means would this ever classify as a Saison, but very nice beer though!

750ml bottle thanks to Paul. Pours out a brownish amber topped with a sand head. Nose is spice tartness funk some farmhouse and sweetness. Taste is more of the farmhouse funk and some spice.

Bottle 75 cl. Pours a hazy yellow with a fizzy, dissipating white head. Elegant funky, spicy aroma - flowery. Light in body, tart but not astringently so - in a very elegant way. Again spicy and flowery, but all very subtle and refined making this a very delicate and pleasant Sour. 170615

Bottle share gathering at Bruce’s. Thanks to Theydon_Bois. Hazy pale gold beer, little white head. Limey nose. Palate is light, dry and crisp. Tart lime, little salt. Mild cucumber and a touch of sherbet. Light dry finish. Bitterish cucumber linger. Interesting!

Bottle in Glenwood Springs, thanks to Steve_0. Pours a hazy light yellow appearance with a white head. Green herbs, lemon, light funk, wheat in the nose. Somewhat tangy, floral, dandelion, watermelon, juicy fruit flavor. Actually tons of watermelon. Juicy and refreshing while still kind of a weird flavor.

Bottle shared at Bruce’s place. Thanks to Colin for this one. Light straw yellow coloured pour with a lasting white head, aroma is fresh lime, mint leaves, crisp, mineral, salt, cucumber. Flavour is composed of lime leaves, straw, sharp, straw, wheat, mojito, little sharp, semi puckering. Palate is crisp, straw, slight sour, highish carbonation. Tangy lime a little coconut and sharp. Good stuff.

Bottle split at Bruce’s, from an IP trade with a texan dude, 06/03/15. Hazed orange yellow with a moderate off white head. Nose is tangy citrics, spice, apricot, light menthol notes. Taste comprises lime jus, tangy citric rinds, straw, light farmyard, damp hay, herbal notes, touch of germaline. Medium bodied, fine carbonation, semi drying close. Ok saison but probably one of the weaker beers I’ve had from Jester King.

Bottle thanks to Colin. It pours cloudy yellow with a small white head. The nose is bready, lightly, funk, apricot, sherbet, gooseberry, vanilla, barnyard, musty and dirt. The taste is crisp, tart, lactic, citrus rind, gooseberry, white grape skin, grapefruit, sherbet, good mouth-pucker, light menthol and good deal of acidity with a dry finish. Medium body and average carbonation. Aroma is pretty musty, but it tastes rather nice.
