Bottled. Golden colour with a small slightly off-white head. Aroma is fruity, some funk, mild earth, some cherries as well as spices. Flavour is strong on the fruits, cherries and some slight funky farmyardy tone to it. Somewhat dry, and as it warms up it also gets some hints of spices and some apples. Smooth and nicely dry palate. ABV well hidden, though it gives a slight sweetness in the flavour.

Draught at Deep Ellum, 2010.
Brass-to-amber-golden-orange. Lightly-to-minimally hazy. Off-white head is medium-sized, slowly falling to cover.
Tons of cereal and various grain notes in the nose ranging from light sourdough and biscuit to honey. There's a light, Belgian-like yeast character which adds a pleasant, mild fruitiness (nectarine, apple, pear) with strong, nutty, wheat-like notes to continue to the mild trend. The hops are strongly grassy, however and seem to work against this. Heavy dried herbs, pepper and strong, dried grass don't really brighten so much as acidify the nose. Alcohol is well-concealed and there's no flaw, but I'd much rather see something like Styrian Golden or hallertauer here.
In the mouth it's soft, supple and shows bland, nutty wheat and big biscuit and cereal notes with light citrus growing alongside lightly bitter, herbal and grass-filled hop notes. Gets rather bready and almost shows too much bitterness, bordering on astringent between hop and phenol, on the finish. I think the soft texture and malt character does bail it out, but I would have loved to see this thing dominated by soft, round, mild flavors. With its good attenuation, it doesn't really need the heavy bread, phenol and hop character.

22 oz bottle at The Sovereign. Served in a tulip. Clear golden orange with off-white head. Aromas of herbs, dark fruit, biscuit. Tastes of floral, herbs, biscuit, subtle funk. Medium body with a dry finish. Not aging too well.

Thanks to Gender! Bottle into a tulip showing well filtered orange caramel brown with sparse white foam. The nose shows a lot of sweet caramel malts. The palate is light bodied and well carbonated. Flavors of sweet caramel malts and a light unharmonious bitterness. Not exactly a saison.

Pour is a hazy red with a large white head. Aroma is a nice mix of some berry fruity and spicy rye. I also get a bit of pepper and maybe a touch of honey. Flavor is again a berry with the rye malt showing up the most. Very heavy mouth feel for a saison. Finish is more like eating a baked pie crust without the pie filling. This beer was all over the place with the flavors which made for a unusual saison. The sum of all those parts worked though because this was still a flavorful beer.

22 ounce bottle into tulip glass, bottled in 8/2015. Pours slightly hazy orange/amber color with a 1-2 finger dense off white head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings around the glass, with a light amount of streaming carbonation. Aromas of lemon, orange, pear, apple, light banana, pepper, clove, wheat, toasted oats, spicy rye bread, wood, herbal, grass, and yeast earthiness. Damn nice aromas with good balance and complexity of fruity/spicy yeast, earthy hops, and bready malt notes; with good strength. Taste of big lemon, orange, pear, apple, light banana, pepper, clove, wheat, toasted oats, spicy rye bread, wood, herbal, grass, and yeast earthiness. Moderate amount of earthy bitterness and yeast/rye spiciness on the finish; with lingering notes of lemon, orange, pear, apple, light banana, pepper, clove, wheat, toasted oats, spicy rye bread, wood, and herbal/yeast earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/spicy yeast, earthy hops, and bready malt flavors; with a great malt/bitterness/spiciness balance and zero cloying flavors after the finish. Moderate amount of dryness after the finish. Medium carbonation and body; with a very smooth, fairly crisp/sticky, and lightly creamy/bready mouthfeel that is great. Alcohol is very well hidden with minimal warming present after the finish. Overall this is an awesome and unique saison style. All around great complexity, robustness, and balance of fruity/spicy yeast, earthy hops, and bready malt flavors; and very smooth and crisp to drink. A highly enjoyable offering.
