Imperial Stout aged in Bourbon Barrels with Assam Tea, Ube Powder, Ube Syrup & Vanilla. For our second collaborative effort with the marvelous team behind OpenGym we wanted to get a little more wild with it. After a nice sunny afternoon sitting in the park, crushing Ube Royal Milk tea and Imperial Stouts, pondering what to make, we realized - let's put them together! So we selected some choice wheated bourbon barrels from our barrel-stock of OG stout base, and dosed the blend with a hefty house-made puree of sweet potato powder, vanilla, and ube syrup. To top it off, we then rested the blend on this incredible Assam tea, known for its luxurious fruity profile and subtle floral notes.

2021 vintage. Cloudy black, thin, dark beige head. Intense aroma of chocolate sauce, maple syrup, pancakes, vanilla, brownie, soy sauce, toasted coconut, cappuccino, black tea, bourbon, pecan. Taste has sweetish prune, pear & date in an ultra-thick malt body of artisan milk chocolate, pecan & vanilla, hint of herbal tea and umami soy, slight touch of sourish coffee bean. Peppery & herbal hoppy finish, ongoing maple syrup & fondant, and eventually a good dash of warming bourbon alcohol. Full body, oily texture, soft carbonation. Interesting mix of flavours, complex and very cosy indeed.

Clear dark brown to black beer, small aery irregular off-white to grey head, big bubbles, pretty stable, non adhesive. Aroma: lovely, very intense, maple syrup, vanilla, chocolate, oxidized, soy sauce, coconut, earthy. MF: soft carbon, medium to full body. Taste: good roast up front, cocoa powder, a bit sourish, sweet touch, vanilla, sugary, earthy, nice! Aftertaste: dry, alcohol, oxidized, vanilla, some chocolate, good stuff, sugary, caramel, more vanilla, sweet, maple syrup, complex finish, lovely beer! Great ending of the night, except we weren’t done yet. :p
