By popular demand, we are back with a Christmas beer this year! The brilliant and crazy label remains unchanged (thanks, Jean Goovaerts!), but the beer has a new name: the SCHIEVE X-MAS. If you look closely at the label, you’ll understand why. And it also has a new recipe!
As you know, we like to test the limits while developing a Christmas beer. For the Schieve X-Mas we have been playing with the characteristics of the style, but without the typical syrupy and heavily spiced features.
The foam of the Schieve X-Mas is beige and dense. Its color is copper, with appetizing red highlights. Its aroma immediately presents a nice balance between malt and hops. On the palate, you’ll find delicious flavors of caramel, biscuit, and pudding, complemented by notes of candied fruits, mandarin, bitter orange, and licorice (all this without using a single gram of spices or fruits!). It has a beautiful bitterness that lingers in the mouth, with a dry and light finish. The beer is warming, but not overly boozy.
A perfect beer to end autumn and start winter on the right foot!
It has an alcohol content of 8% and is available in very limited quantities, both in bottles and on tap.

Lichtbruin bier met schuim wat niet al te lang blijft staan. Smaak is licht bitter en kruidig met wat hout, een beetje rook en geroosterd brood. Een wat anders maar heel goed kerstbier.

Creamy off-white good mostly lasting head. Amber colour. Moderate malty and light hoppy and mderate yeasty aroma. Moderate bitter flavor. Average moderate bitter finish. Oily palate.

Large tight off white head on a murky caramel coloured body. Spiced, bitter & hop aroma. Medium bodied, foamy dry & clean. Spices, raisin, grape & caramel tastes bitter hopped finish. Very nice.

Bottle at home, from HOTM online, 13/12/24. Murky chestnut brown topped with a big old lasting faded beige cap. Nose is raisins, herb, brown bread, toasted grains, biscuit, dusty wood, dates. Taste comprises stewed fruits, brown bread crust, toasted brown sugars, earthy bite, dates, light spice, caramel. Medium bodied, fine carbonation, semi drying close with a light rasp of alcohol. Decent Belgo strong.

Bottle from Beer Shop St Albans. It pours darker orangey - brown with a thick, fluffy beige head. The aroma is hearty malts, brown bread, spice, ryvita, toasted fruit cake, woody, resin, fragrant , herbal , spicy, bitter orange peel and a splash of campari. The taste is pleasingly bitter, punchy, firmly dry, resinous, pithy, zesty, bitter orange peel, tangerine, fragrant, dry wood, angelica, liquorice root, hearty malt base of dark bread, cake, spiciness and a nip of alcohol with a lingering bitter finish. Medium body and moderate, fluffy carbonation. Quite a different Xmas beer offering, but very De la senne. A modern Belgian interpretation for sure.

Couleur oscillant sur l'ambre et cuivre, col épais beige crémeux vers le café au lait.
Arôme sur un bouquet délicat malté avec une belle note biscuitée - fruits confits orangette chocolatée - pain d'épice. Franchement très belle approche au niveau des céréales/malts avec une approche très DLS sans pour cela tomber dans une énième reviste ennuyeuse d'une bière de Noël belge.
Palais est franchement bien foutu pour une bière hivernale/Noël, impressionant au niveau de l'apport épicé hivernal mais sans avoir la moindre note d'épicé et/ou de fruits.
Malté sur le pâle, caramel, petite touche orange confite, réglisse, anisé - petite note épicée rappelant la cannelle, cardamome et girofle. En retrait, je retrouve un fini de levure qui fait la signature de DLS.

Bottle from Appellation Wines. Appearance - amber brown and fairly opaque. Huge foamy, off-white head. Nose - burnt toffee, sweet spice and stewed fruits, maybe some black banana. Taste - sweet spice, apple, stewed prunes and sweet chocolate. Palate - medium bodied, creamy middle and sweet/spicy finish. Overall - good.
