Bourbon barrel-aged wheatwine-style ale with pear, orange zest, and spices
Like any good punch, this wheatwine-style ale has a bit of everything. We took 2021's Birnesap and double barrel-aged it in bourbon barrels, then added pear and orange zest to round out the flavors. For the final touch, we added a spice blend consisting of cinnamon, orange zest, whole clove, black cardamom, gentian root, and allspice for the perfect zest of flavor.

(Draft at Oliver Twist, Stockholm, 20 April 2025) Dark brown colour, almost black, with brief beige head. Malty, vinous nose with caramel, treacle, oak wood, dried fruit and raisins. Malty, vinous taste with notes of caramel, treacle, dried fruit, raisins, figs, dates, burnt sugar and a mild spicy bitterness in a warming, slightly boozy, finish. Full body, sweet. Rich, powerful, sweet and boozy. Very nice.

Keg at Oliver Twist, Stockholm. Near black, minimal head. Caramelly chocolate aroma with some madeira. Very sweet with full body and syrupy mouthfeel. Toffee and treacle, milk chocolate and pear brandy. Boozy mid bitter finish.

750ml bottle pours out cola brown topped with a small sand head. Nose is sweet caramel toffee malts some citrus plenty spice and nice rich bourbon barrel notes. Taste is more of the nice sweet malts big bourbon barrel notes spice and orange.

Tap @Taphouse. Black, lasting tan head. Heavy dark malty aroma, cinnamon, caramel. Thick, full bodied mouthfeel with solid alc warmth and bite. Heavy sweet flavour, cinnamon, cocoa and a solid dose of booze-soaked dried fruit. Almost over the top. Really puts some colour into your cheeks.

On tap at Beer Temple, pours a deep dark mahogany with a small tan head. Aroma is intense, with lots of cinnamon, baking spices, maple, and dark sugars. Flavour is boozy, with lots of bourbon, baking spices, cinnamon, and booze. Over the top, nothing is balanced, and it's sweet and spicy. The usual clumsy, boozy, harsh strong ale. Meh.
