For this Oude Rabarberlambik, we macerated local rhubarb on very old lambik, after which we let the rhubarb lambik age even more on an oak barrel before kegging it. In total, we used five different lambik brews originating from three different barrels. The weighted average age of this rhubarb lambik is more than 47 months. The final intensity of this ‘fruit’ is 275 grams per litre. 100% 3 Fonteinen.

750ml (courtesy of the brewery tour guide, a bottle with a label deffect) shared with Ryan and Phill and an American gang. Blend 121, 5.1% ABV. Appearance: hazy golden with a white head. Aroma: awesome rhubarb, loads of stone fruits, some funk. Taste: along the same lines, moderate carbo, dry. Finishes with nice stone fruits. Overall: very nice.

750mL bottled November 16, 2021, drunk 12/18/22. Clear, darker bronze-maize. Small, off-white head to ring. Smells a little metallic, quite sour, with heavy lactic acid and not much in the way of softer, brighter Brett and little/no funk (barnyard). Cracker and bland wheat, no sweetness. Just a lot of bare lactic acidity and austere rhubarb. Both of which contribute way too much dryness/acidity without any real big softness or fruity brett or poopy barnyard. In the mouth it's exacerbated with a somewhat soft, wheaty texture but just so much tart rhubarb and heavy lactic acidity. No barnyard, little/no Brett. It's competent and fine, but far from great.

Blend n°24, 20 - 21. Very sour dry fruity beginning. The rhubarb is fruity there, moderate sour horse blanket. Mild creamy with sour horse blanket and only hints of rhubarb in the end. Very nice.

Flaska från 3 Fonteinen, 20 - 21 b24. Klar ljusguldig utan krona. Helt stilla - verkar variera mellan flaskor. Ganska liten arom. Lite kattpissigt, syrlig rabarber, äppelkart. Något vass och skarp i syran, samtidigt som jag saknar lite mer tryck och fyllighet överlag. Avsaknaden av kolsyran gör den tyvärr inte tjänst i detta fall.

Hand pump @ Billie's Craft Beer Festival 2021. Soft, smooth and slightly funky with some lovely juicy rhubarb notes. Nice one.

Bottle at Humus x Hortense 3F Dinner. Pours a cloudy orange gold with small white head that diminishes quickly. The aroma is rhubarb, floral, oak, funk, straw. Light body, rhubarb, strawberry, funk, oak, nice tartness, enjoyed this.
