Today XO is a a blend of solely three year and older barrels. This is its third iteration. This beer is made from three brews, fermented in three different barrels.
The worts were made in January, February and April 2020 using traditional turbid mash methods. They were subsequently left in our coolship overnight to be inoculated with wild yeast and bacteria, before being fermented in oak.
The resulting beer underwent extended bottle maturation before release.

Bottle, 750 ml at my Grande. Hazy orange with medium white head. Citrus, brett, some peach, barrel, medium sourness.

75cl bottle at Martin and Lauras, Church Stretton. Pours a misty gold. Lovely aroma, soft fruity flourishes, pleasant wild air. Flavour profile presents some walnut notes, floral, fruity peach, soft citrus with subdued acetic elements, breezy acidity, nice balance.

Bottle. Mills online. Light haze on a medium gold. Slim lasting white head. Sour mash. Oak. Light bretty notes. Bit of new leather. Some peach stone. Taste is fairly tart and a little dry, with a nicely juicy bretty fruity bitterness. Clean and lean throughout as befits a fresh geuze. Twang and brett and oak. Nice. As per others of this iteration this has ageing potential.
