The second of a fresh and mixed ferm duo of beers made with Burning Sky. A collaboration to share knowledge and reignite our love of and passion for farmhouse brewing. This spontaneous barrel aged version from our Fermata Range was first coolshipped before barrel aging in oak foeder for a year. Finally blended with a saison with the addition of grapefruit and peppercorns. Tart with notes of clementine and plum. Farmhouse brewing is nothing without Ferm Friends.

aroma is peppery, somewhat wild yeasty, fruity, more wild ale than saison, pleasant complexity in the aroma with notes of wood, leather, brett, fruity and sour beer. sour beer flavor with, unfortunately a little bit of sulphuric notes. Other than that a good rounded sourness, grapefruity notes, citrus fruity notes, fainter wood, some leather. something seems a bit odd though, so not totally perfect.

Bottle. Pours straw amber. Tart, grapefruit, lemon, minerally, funk. Medium body. Decent.

On tap at The Green Goddess, Blackheath Royal Standard. Light hazy gold pour with a white head. Orange marmalade, white pepper & gooseberry jam aromas. Funky tart taste, zesty lemon, bitter orange, more white pepper. Dryer than June in any other country apart from this one 🌨😕. Mouth puckering, lightly eye wincing finish.

Keg @ Tap and Can. Pours a dull hazed gold, small white head. Excellent complex wild aroma. Impactful first sip, didn't expect such depth of flavour here.. bristling wild elements.. ostensible white wine influence.. cutting sour edge revealing wonderful definition.. really not common to taste a beer like this from keg. Fantastic.

This is surprisingly fabulous. I have a mixed relationship with the Saison style. Often avoided as murky tart averageness. This is Cantillon level excellence. Drink it now
